AI in Restaurant Technology: From Guest Discovery to Restaurant Operations

August 5, 2026

AI is quietly becoming part of almost every stage of the restaurant journey.

A guest can discover a restaurant through ChatGPT, Claude or Alexa+, call a restaurant and speak to an AI assistant, enquire about a private event without talking to a member of staff, receive personalised loyalty offers, or help restaurant operators analyse performance using natural language.

What’s striking isn’t that one company has embraced AI.

It’s that AI is appearing simultaneously across reservation platforms, POS systems, payment providers and hospitality software.

The announcements shared across the restaurant technology ecosystem over recent months suggest that AI is no longer emerging as a standalone product category.

It is increasingly becoming a capability embedded throughout the hospitality technology stack.

This article brings together some of those developments, highlighting several observations that may help hospitality technology companies better understand how AI is being applied across the industry today.

AI is changing how diners discover restaurants

One of the most visible changes is happening before guests even visit a restaurant website.

Instead of searching with keywords, diners can increasingly ask conversational AI assistants for recommendations and reservations.

OpenTable became available through ChatGPT, allowing users to discover restaurants and book tables using natural language. OpenTable also introduced restaurant discovery through Alexa+ in the UK. ResDiary announced similar capabilities through Alexa+, while Resy integrated with Claude AI to enable conversational restaurant discovery and reservations.

Although each company has taken a different approach, they all point towards the same evolution.

Restaurant discovery is becoming increasingly conversational.

AI is moving beyond chatbots into restaurant operations

The next wave of AI is taking place behind the scenes.

Rather than simply answering customer questions, AI is beginning to automate operational workflows.

Tripleseat integrated with Sadie AI to automate private event enquiries directly within its platform, helping venues reduce manual administration. Shift4 integrated Maple Voice AI into SkyTab, enabling phone reservations and orders to flow directly into the POS without manual entry.

These developments illustrate how AI is becoming part of day-to-day restaurant operations rather than remaining a customer-facing feature.

AI increasingly depends on connected restaurant data

As AI becomes more capable, another trend is becoming apparent.

Its effectiveness increasingly depends on access to reliable operational data.

Foodics reported that 51% of restaurant chains are investing in AI, yet only 9% say it delivers measurable business impact. According to Foodics, fragmented data and siloed systems remain one of the biggest barriers to achieving meaningful AI results.

Other companies are responding by embedding AI directly into operational platforms.

PAR Technology introduced PAR Retail Drive™ AI to automate loyalty execution and strategic planning using unified guest data. Olo launched its first integrated loyalty solution alongside automated menu availability, while Toast IQ introduced natural-language prompts that allow restaurant operators to interact with operational data in a conversational way.

Together, these announcements suggest that AI delivers the greatest value when it can access consistent information across reservations, payments, loyalty, menus and POS-Systeme.

AI is becoming part of the restaurant platform

Rather than launching standalone AI products, hospitality technology providers increasingly appear to be embedding AI within the software restaurants already use.

Yoco acquired Dyner.ai to introduce AI-powered inventory and operational intelligence into its POS platform. Last.app launched an MCP connector allowing AI agents to retrieve restaurant data and perform operational tasks directly within the platform. Newo.ai secured $25 million in Series A funding to expand AI voice infrastructure that converts phone calls into reservations.

These developments point towards AI becoming another native capability within restaurant technology platforms rather than a separate layer sitting alongside them.

Looking ahead

Artificial intelligence is already reshaping hospitality technology.

Not through one breakthrough application, but through dozens of incremental improvements appearing across guest discovery, reservations, voice, loyalty, operations and business intelligence.

The announcements highlighted throughout this article do not suggest that AI will replace existing restaurant systems.

Instead, they show AI becoming increasingly embedded within them.

As AI capabilities continue to evolve, restaurant technology providers will likely place greater emphasis on data quality, workflow automation and platform connectivity to maximise their value.

For hospitality technology companies, AI is no longer simply another feature.

It is gradually becoming part of the infrastructure that supports the entire guest journey.
